Vegan MoFo Day 1









And so starts another VeganMoFo!

This week I am taking all of my recipes from the book 'Passion for Pulses' Compiled by Nancy Longnecker.



I've had this cookbook for quite a while, but usually forget about it! I decided to use this book for the first week as pulses are really something that lacks in my weekly cooking and I need to cook with them more often. I'm excited for this week as I'm trying things I might not usually pick from this book, including Lentil Cookies and Chickpea Cookies.

Tonights dish was Persian Bean Casserole (ARSH)  (pg. 68).  I loved the idea of using 3 different pulses (chickpeas, kidney beans & cannellini) and throwing in some pasta is always a winner with kids.



My verdict: Quite a bland dish, but the kids liked it. Next time I would double the fried onion garnish as I really liked the taste of the onions in each mouthful - it added a little bit needed flavour.

Persian Bean Casserole (ARSH) in Passion for Pulses

Serves 8 (actually, it was just a perfect amount for the 2 adults and 3 kiddies in this family)
(use tinned or precooked peas and beans to save time)

1C (200g) dried chickpeas
1C (140g) dried kidney beans
1C (180g) dried cannellini or haricot beans
1T oil
1 onion, finely chopped
2 cloves garlic, crushed
1t dried mint
10C (2.5L) water
2 1/2C pasta shells
2 bunches (4C) fresh English spinach, rinsed and chopped
1 bunch parsley, chopped
salt and black pepper
plain yoghurt for garnish (I DID NOT use this. Not a fan of soy yoghurts.)
1C fresh coriander, chopped

Soak chickpeas and beans overnight. Drain. In large pot, fry onion, 1 clove of garlic and mint in oil. Remove from pot; set aside. 
Put chickpeas and beans in same pot. Add water. Bring to the boil; simmer for 1.5 hours or until beans are tender, adding more water as necessary.
Add pasta and return to the boil. When pasta is nearly cooked add spinach, parsley, salt, pepper, and the second clove of garlic. Cook for 10 minutes; remove from heat.
When arsh has cooled slightly, top with a dollop of yoghurt, and garnish with fried onion mixture and fresh chopped coriander.

Cake, salad & (no) sausage rolls

After reading a post from the blog "Cooking From 1,000 Vegan Recipes" (I've found a bunch of vegans who love this book as much as I do!) about Sour Cream Coffee Cake, I was inspired to make it. The author  said 'I found THE BEST RECIPE in the entire book!' and I really wanted to try it for myself!




Doesn't it look yummy?!! The ripple is a mixture of walnuts, sugar and cinnamon. This cake was really nice, although I would not go as far as naming it the best recipe in the book. It is so full of sugar (2 whole cups!!) it's not funny. (Did I just say that?? I think my sweet tooth is starting to mature!). It's definitely delicious, but not one that I would probably make again (it is a bit fiddly, too.)

This morning I made a salad for the kids for school. I had made extra rice last night (we are eating freezer foods at the moment, trying to get rid of the bits in my freezer in preparation of 'the move') with the full intention of using the left over rice in a sweet rice dessert tonight but instead I used it to fill out this salad.

Really good! Even the kids' lunch boxes came home empty! I have decided that I DO like salad - but only if I make it! Then I know what is in it and what is not (especially celery - I HATE celery!) I know this salad looks/is simple - but remember that I don't like salads (ok, last time I say that! I DO like salads, I DO like salads) and I am only just learning!

Tonight I made vegan sausage rolls from Where's the Beef?. I have seen their sausage rolls mentioned a few times on local Melbourne blogs raving about them and seeing them again on Miss T's blog I decided I just MUST make them!
Even with the rave reviews, I must admit, after seeing the ingredients list I was still not convinced. Pecans? In sausage rolls? But I was determined to put my prejudices aside and have-a-go. Even after making the mix I was still skeptical. But, let me just say WOW.


You MUST try these!!!!! Every now and then I would get a little bite of a pecan nut. Pure pleasure! These are so good! They will definitely become part of my recipe file. We even enjoyed them cold! Give em a go.

I got a bit more christmas shopping done today. My mobile phone battery is almost dead so I purchased a supposedly unlocked cheapo phone today for $40 to stick my sim card in. But it doesn't work! So disappointed! I hope they give me a refund because I really couldn't afford the $40 (I had to pay my rego today too! It's actually due christmas eve - how shit is that!) especially after I made sure I asked them If all I had to do was stick in my sim card. :(
Not many gifts left to get. I REALLY need to find a pressie for Popeye, but I have NO idea! I hate buying gifts for blokes! Any ideas?

Zucchini is coming out of my ears!



On Saturday we got to the Markets VERY late so we didn't have much choice left. It was 15 minutes before closing and the stallholders were getting rid of the last bits of fruit and veges. I managed to pick up a dozen zucchinis for $1! So I have been trying to find yummy things to do with them before my pets (the worms) get to eat them.

So I found this recipe for Vegetarian Chilli on the Supercook website (there is a bit of a theme going on here with the Supercook website this week!). I know most of you will have your own chilli recipe you use, but I haven't got 'one' yet and found this one to be SCRUMPTIOUS! Every single one of my babies LOVED  it. I used up 2 of the zucchinis in this recipe, changed the 2T of cumin seeds to 2t (still could taste it but not overpowering - too much spice makes for whingey kids!). I'd also add MORE sweet corn as I am such a fan of this vegetable (that's because I am such a sweet tooth!). I didn't have an extra can of whole tomatoes so I left it out, but next time I would try it with 2 cans of chopped or some fresh chopped tomatoes. Other than that, I think this recipe is a keeper for us. Maybe it will be my 'signature' chilli! ha



Oh, and I had a TINY bit of left over rice from last night that I added right at the end.

I went to the 'Nong today to help my BIL with his website. I tried to find the new Vegesafe cafe for lunch (was suppose to be on Foster St), but could not find it ANYWHERE! Very disappointed as I was hoping to see what they had, give it a go and review it. If it is there it is hiding and not very noticeable - if a vegan looking for it can't find it, how are the general public going to go! Shame, really, was looking forward to it.

On the way out my sister and I stopped at Savers. Wow, that is a big store! Very neat, orderly and set out. Lots of kids clothes too, so I promised that I would take the kids there one day (they'll love it!). All we pulled up in a parking spot and were putting some coins into the meter, an average looking, nicely dressed bloke came up to us and said that he had just had his wallet stolen and really wanted to buy a jacket in the Salvos (that store was right where we parked) for $5 and could he swap some cigarettes for $5. My sister said she had no money but I knew I had a $5 note and although I am on government benefits (dole bludger!) I reached into my bag and handed him some money. He looked at me, took the cash, started to walk off, then turned and said thanks. Then he started to walk in the OPPOSITE direction of the Salvo store! Rude. Anyway, we went into the Savers store and after 10 minutes in there the same dude walked up to us and was about to give us the same line again but you could see in his face he recognised that we had already been suckered into  handing over money and he promptly turned and got the hell out of there. You, know, it really annoyed the crap out of me because 1. I have NO money (I haven't been paid for the teaching work yet) and 2. It makes me think twice about helping out these people who REALLY need help. I bet he makes more in a day than I get from the government with 3 kids in a week! So wrong and again, I feel embarrassed that I got suckered in again!
